A tasty recipe is what I got

This recipe is not just about eating a bowl of healthy veggies to cleanse you of your sins from the weekend. It’s about energizing and nourishing you with sublime, crave-worthy and guilt-free vegan flavours.

Blurred limes

The right plant food flavour combinations can be so mind-blowing delicious that the line between healthy and indulgence becomes blurry. This latin-themed Zesty Life Bowl is full of nutritious whole foods and has serious oomph, but don’t start a riot when you feel your mouth get hot.

Spinach – One of the most nutrient-dense foods on the planet, this endurance enhancing leaf is full of iron, contains cancer fighting antioxidants, Vitamin A, Vitamin K, and 40% of your magnesium requirement daily. Whoa yeah baby let’s get it on!

Avocado – Full of brain-healthy omega-3 fatty acids, inflammation reducing antioxidants, and blood pressure reducing potassium (30% more than a banana!).

Cilantro – Cilantro is one of the richest herbal sources for vitamin K; provide about 258% of daily recommended intake. Vitamin-K has a potential role in bone mass building. —recovery faster from injuries!

Jalapeños – Jalapeños are full of metabolism-boosting, pain-relieving and cancer-fighting capsaicin, digestion-aiding fibre and immunity enhancing vitamin C.

Sublime Lime Latin Bowl

Serves: 2 Cooking Time: 40min

Ingredients

  • 1 c tri-coloured quinoa (plain is fine too)
  • 1 yam, cubed small
  • 1 c spinach chopped
  • 1 jalapeños, sliced
  • 1 c rinsed and cooked organic mixed beans
  • 1/2 tbsp cumin
  • 1/2 avocado sliced
  • 1 tbsp pumpkin seeds
  • 1-2 tbsp coconut oil
  • 1 tsp pink sea salt
  • Sublime Lime Sauce
  • 1 c chopped cilantro
  • 3/4 lime, juiced
  • 1/2 tsp. pink himalayan salt
  • 1/2 c coconut milk
  • 1/2 c extra-virgin olive oil

Instructions

Preheat oven to 350 degrees F

Lightly coat a cast iron pan with coconut oil and arrange cubed yams; sprinkle the cumin and 1/2 tsp pink salt on top. Bake for 30–40 minutes, tossing every so often.

Combine 1 c quinoa with 2 c water, bring to a boil and then simmer for 30min

Slice the jalapeños, and when the yams have approx 10min left, toss the jalapeños and beans into the pan with the cumin yams, toss everything around and cook for another 10min.

Prepare your Zesty Life Sublime Lime sauce

Add chopped cilantro, lime juice, coconut milk and 1/2tsp pink salt into blender or vitamix. Blend! Once the mixture is well-blended, add the olive oil and zap once to gently blend in. (don't over-blend olive oil or you'll heat and damage it)

To serve

Toss your spinach in a bit of the sauce and arrange in your bowl. Add about 1/3 c quinoa and top with roasted cumin veggies, pumpkin seeds, avocado and a few Jalapeño slices on top for an instagram-worthy photo 🙂 Drizzle with your desired amount of Sublime Lime Sauce.
