Sunrise Tofu Scramble


I can’t believe that’s vegan mañg!

If you’ve never tried a tofu scramble, you’d be surprised to tofu takes on the flavour and texture of scrambled eggs!

This is a great pre-workout or weekend breakfast, and you can add any vegetables you like. Tofu provides a good helping of protein, turmeric gives a kick of anti-inflammatory and appealing colour, the nutritional yeast adds a cheesy flavour and some added Vitamin B-12, and the cumin, cayenne and salsa gives it a mexican kick!

Nutritional Highlights

Sunrise Tofu Scramble

Serves: 2 Cooking Time: 20


  • 2 tbsp. coconut oil
  • 3 tbsp. diced red bell pepper
  • 1 garlic minced garlic clove
  • 1/4 c diced purple onion
  • 1/4 c washed & pre-cooked black beans
  • 16 ounces extra-firm tofu, drained and crumbled into small pieces
  • 1 tsp. turmeric
  • 1 tbsp. nutritional yeast
  • ½ tsp. ground cumin
  • 1 tsp. pink himalayan salt
  • ⅛ tsp. cayenne pepper
  • small bunch cilantro, minced
  • 1 avocado, thinly sliced
  • Fresh Salsa (optional)



In a cast iron pan, heat the coconut oil over medium heat.


Add the diced pepper and onion and sauté about 2 minutes.


Stir in the garlic, beans and cilantro, and sauté for 30 seconds more.


Add the tofu, then add the turmeric, cumin, salt, nutritional yeast and cayenne and cook for 3 more minutes, stirring occasionally.


Plate the scramble and top with sliced avocados and salsa.
