If your palms are sweating and your heart is racing, don’t faint—hurry up and make this delicious and nutritious bowl! A creamy plant-based breakfast or dessert, with brain-boosting whipped coconut, heart-supporting nectarine, butterfly-combating ginger and mood-boosting lemon, topped with energy-restoring Zesty Life Granola!

Lemon – Lemons are an antioxidant powerhouse and can help reduce inflammation and eliminate free radicals so you can be fit to shred like the tubular boss you are.

Ginger – Ginger is among the healthiest and zestiest spices on the planet. A natural anti-inflammatory, it may reduce nausea, help with digestion, fight cancer and boost the immune system. For athletes, ginger can open up your airways, assist in weight-loss, improve circulation and strengthen your immune system.

Ginger – Significant amounts of free-radical fighting antioxidants, including cancer-fighting carotinoids.

Coconut Milk – Loaded with natural pH feeding electrolytes, immunity and energy enhancing lauric acid and  fat burning MCTs.

Coconuts for you Breakfast Bowl

Serves: 1–2 Cooking Time: 10min

Ingredients

  • 1 C coconut cream
  • 1 nectarine or peach
  • 1 tbsp juice from grated ginger
  • juice from 2 lemon wdges
  • zest from ½ lemon
  • ⅓ C Zesty Life Granola

Instructions

Use an electric mixer with a mixing bowl or use a Vitamix to whip your coconut cream for 1–2 minutes.

Arrange your nectarine or peach in a bowl and add 1/2 c whipped coconut cream. Top with juice of ginger, lemon juice, lemon zest and Zesty Life Granola.

Store remaining coconut cream in fridge.

Notes

ZESTY TIP If you’re running out of time or feeling lazy, don’t bother whipping your coconut. You could also make this with: Almond Milk Cashew Milk Soy Milk Oat Milk
