Ingredients

  • 1 large avocado
  • 2 pieces GF ancient grain bread (Spelt, Amaranth, Buckwheat etc.)
  • 2 tbsp pumpkin seed butter
  • Juice of large lemon wedge
  • Zest of 1/2 lemon
  • 1 tbsp. dried cranberries,
  • Sweetened with apple juice
  • ¼ tsp pink Himalayan salt
  • Small handfull pea shoots

Instructions

Remove the pit from your avocado and use a spoon to scoop out the flesh into a bowl. Add your lemon juice, cranberries, and salt. Smash it all up like a badass!

Toast your bread until golden

Spread your pumpkin seed butter on the toast.

Spread your avocado mixture on top.

Finish with pea shoots, lemon zest and a pinch of salt.

Zesty tip My top pick when eating bread is "European Breads Bakery" They have some delicious breads that are yeast and sugar-free, organic, and contains only simple ingredients such as: organic spelt flour, organic bacterial culture, sunflower oil, salt. My top pick for cranberries is "Patience Fruit & Co." Juicy and flavourful, they offer sugar-free cranberries, sweetened only with apple juice.
