I’m Berry Hungry Blackberry Crumble

Before you set off for your early morning bike ride, pour yourself a cup of coffee and a grab a big hunk of this blackberry crumble—the perfect way to start a summer day. Loaded with freshly-picked blackberries; this recipe is sweet, juicy with a hint of tart, and will make you crumble with delight! 

Berry Nutritious

With the abundance of blackberries ripening right now, it’s the opportune time to reap their benefits—Vitamin C and antioxidants to protect your cells, fibre to aid digestion, and manganese to support bone strength.

Almond Flour – Full of muscle-repairing protein, energy-boosting Riboflavin and Vitamin B2, free radical fighting antioxidants and blood sugar and blood pressure stabilizing magnesium.

I'm Berry Hungry Blackberry Crumble

Serves: 8-12 Cooking Time: 30min

Ingredients

  • 1/2 c coconut oil, melted
  • 1/8 c maple syrup
  • 1/4 lemon, zest & juice
  • 1/2 c almond flour
  • 1/2 c amaranth flour
  • 1/2 c gluten-free oats
  • 1 tsp cinnamon
  • 1/3 c ground flax
  • 1/3 c walnuts, crushed
  • 1/2 tsp baking powder
  • 1/2 tsp pink himalayan salt
  • 3 c fresh blackberries

Instructions

Pre-heat oven to 375ºF.

Mix the coconut oil, maple syrup, and lemon juice together.

Add the flours, oats, cinnamon, ground flax, walnuts, baking powder, salt, mash together.

Lightly coat baking dish with some coconut oil

Take approx 1/2 the mixture and press into baking dish

Pour your blackberries into the dish

Gently scoop the remaining mixture on top of the berries—imperfect little chunks is better.

Top with a pinch of salt, some lemon zest, and a tiny drizzle of maple syrup.

Bake until golden and fruit is bubbling.
