Saturday morning just got flippin’ awesome with these delicious vegan & gluten-free pancakes. Fluffy, protein-rich, and delicious!

If you’re looking for a tasty, satisfying and healthy breakfast, you batter try this recipe! With endurance-enhancing chia seeds, a heaping dose of plant-based complete protein from quinoa, cardio-enhancing and inflammation reducing flax seed meal, your competition simply won’t stack up!

Nutritional Highlights

Quinoa Flour – Essential nutrients for muscle recovery, one cup of quinoa delivers minerals, fibre, antioxidants, enzymes, all nine essential amino acids and nine grams of protein, making it one of the most complete foods in nature. Iron-rich quinoa helps the body produce energy and helps the blood deliver oxygen to muscles. Particularly critical for female and endurance athletes who are often iron-deficient.

Almond Flour – Full of muscle-repairing protein, energy-boosting Riboflavin and Vitamin B2, free radical fighting antioxidants and blood sugar and blood pressure stabilizing magnesium.

Serves: 2 Cooking Time: 20min


  • 1 banana
  • 1/4 c coconut oil, melted
  • 1 c organic nut milk (I use soy)
  • 1/2 c ground flax
  • 1/4 c chia seeds
  • 3/4 c almond flour
  • 1 c quinoa flour
  • 1 tbsp cinnamon
  • 1/2 tsp pink himalayan sea salt
  • Lightly toasted walnuts & pumpkin seeds
  • 100% pure maple syrup



In a blender, add everything except nuts & syrup


Blend lightly until combined


Heat a pan with a drop of coconut oil


Pour pancakes onto hot pan, flip when golden


Top with walnuts, pumpkin seeds and pure maple syrup.
