I love LOTS of flavour, and there’s nothing quite like zesty soft tacos filled with a plethora of delicious ingredients. I assure you these babies will railroad your taste buds.

Move aside Thomas, there’s a new train in town!

Soft tacos are a hipster dream these days, but often tacos are beer-battered and fried. Today I ask you to hop on my flavour train and discover this healthier, plant-based, baked version of soft tacos.

Nutritional Highlights

Yam – Yams are made up of complex carbohydrates and dietary fiber allowing for slow uptake to keep blood sugar levels steady. Yams have healthy skin promoting and bone strengthening vitamin A, which also works to heighten night vision (…But probably don’t toss your headlamp).

Cilantro – Cilantro is one of the richest herbal sources for vitamin K; provide about 258% of daily recommended intake. Vitamin-K has a potential role in bone mass building. —recovery faster from injuries!

Avocado – Over twice the potassium of a banana! Avocados are rich in good heart-protecting fat, antioxidants for eye health, high fibre for promotes healthy gut function. —You’re gonna need extra guts for da spicy drops!

CinnamonCinnamon is known to promote heart health and eyesight through beneficial antioxidants, it’s been found to kill E. coli and many other bacteria, and its anti-inflammatory compounds help relieve pain and stiffness of muscles and joints due to arthritis —or a day of siiiick riding!

Cumin – Full of red blood cell producing iron and copper, immune-boosting and digestion-regulating zinc, blood pressure and heart rate controlling potassium, and free-radical fighting manganese.

Sauerkraut – This healthy fermented cabbage contains an incredible amount of probiotics that’ll boost your immune system, digestion and overall well-being. It’s also full of bone-forming vitamin K, free radical fighting and immunity enhancing vitamin C.

Pea Shoots – Peas are commonly being used as a base protein concentrate for many vegan protein powders and they contain between 20-25% protein (Move over popeye, I’m comin up). Pea shoots are also rich in protease inhibitors, these little dudes stop bacteria, viruses and fungi in their tracks. They also prevent certain viruses that promote cancer and are useful in reducing LDL (bad cholesterol) in the blood.

Flavour Train Soft Tacos

Serves: 2 Cooking Time: 1 hour

Ingredients

  • 1 yam, diced or cut into strips
  • 1/3 c cubed firm tofu (optional)
  • red cabbage, shaved
  • cilantro, chopped
  • lime
  • guacamole
  • salsa
  • jalapeňos, diced
  • mini tortillas
  • 6-8 skewers
  • 2 tbsp coconut oil
  • spice rub:
  • 2 tbsp. paprika
  • 1 tbsp. cumin
  • 1 tsp. pink sea salt
  • 1/2 tsp. cayenne
  • 1 tsp. cinnamon
  • 1/4 c beet sauerkraut
  • Cilantro-Lime Drizzle
  • 1/3 c coconut milk
  • 1/4 cup fresh lime juice
  • 2 tbsp extra-virgin-olive oil
  • 1/2 cup chopped cilantro
  • 1 tsp pink sea salt

Instructions

Prepare rub: Combine paprika, cumin, sea salt, cayenne, cinnamon. Split into two portions.

Prepare yam: Dice yam into cubes and coat with half the spice rub. Lightly coat cast iron pan with coconut oil and toss in the yam. Bake at 350°F for approx 35min. Done when soft in the middle and slightly crunchy.

Prepare tofu: Dice yam into cubes and coat with remaining spice rub. Toss the tofu into the pan with the yam when it has approx 15min to go.

Prepare cilantro drizzle: Combine lime juice, coconut milk, cilantro, olive oil and sea salt in a Vitamix or food processor.

Prepare guacamole: Combine avocado, lemon juice, finely chopped cilantro, finely chopped spinach, sea salt.

Plate: Place yam, tofu, pea shoots and cabbage in tortillas and top with sauerkraut, cilantro drizzle, guacamole and a squeeze of lime.
