It often takes a medical scare for us to take a long hard look at the way we’re living life and what we’re eating. Whether it’s a friend gone too soon from cancer, a family member who suffers a heart attack, or a harsh word from our doctor about the state of our well-being, it’s never too late to change your life trajectory forever—for the better. If you’ve never tried a tofu scramble, you’d be surprised to tofu takes on the flavour and texture of scrambled eggs!

This is a great pre-workout or weekend breakfast, and you can add any vegetables you like. Tofu provides a good helping of protein, turmeric gives a kick of anti-inflammatory and appealing colour, the nutritional yeast adds a cheesy flavour and some added Vitamin B-12, and the cumin, cayenne and salsa gives it a mexican kick! Veggies and fruits that have been allowed to fully ripen in the sun taste amazing! Freshly picked produce is crispy, fragrant, juicy and colorful and makes any dish noticeably better. Plants get their nourishment from the sun, water and soil and more exposure to the earth means a higher levels of antioxidants and nutrients.
